Most people have fond memories associated with various foods or smells. I can remember my Grammy making me this recipe when I was a little girl. And of course, I loved it so much I started to make it when I was in high school. You all know that I am not much of a cook, but this was an easy recipe I could get right every time and it tasted so good! So of course, I this recipe is amazing for a few things:

Wet Ingredients for Almond Poppy Seed Muffins

  • Eggs
  • Oil
  • Milk
  • Vanilla Extract
  • Butter Extract
  • Pure Almond Extract
  • Cooking Spray

Dry Ingredients for Almond Poppy Seed Muffins

  • White Sugar
  • All Purpose Flour
  • Baking Powder
  • Salt
  • Poppy Seeds

  • Large mixing bowl for muffin batter
  • Whisk

  • Muffin tin with muffin liners or two bread loaf pans

How to Make Homemade Almond Poppy Seed Muffins

Sugar Mixture

First step, create your sugar mixture and egg base. Combine your eggs, oil, and sugar together in a bowl. Use a neutral oil like vegetable, canola, olive oil or even coconut oil. Beat it until mixed.

Add Wet Ingredients

To the sugar mixture, add the rest of your wet ingredients. Butter extract is helpful for capturing that delicious buttery flavor without all of the calories. But if you don't have any on hand, melted butter will also do. And don't forget the almond flavor. This is what will really set your muffins apart.

Add Dry Ingredients

Add your remaining dry ingredients into the bowl. I use regular all purpose flour, but you can substitute with another kind as well. Almond flour or a cake flour would work too. Mix all of your ingredients together until everything is just combined with no lumps.

Bake Almond Poppy Seed Muffins

There are two options for baking - making the batter into a loaf of bread or making muffins.

For the loaves, grease and flour two loaf pans, then divide batter into both pans evenly. Bake at 350 for 1 hour, or until top of the bread is very lightly golden brown.

For muffins, I use a classic muffin tray and size. Fill each individual muffin tin with a cupcake liner, or spray and flour each muffin cup. Now, if you prefer Costco muffins, you'll have to invest in a jumbo muffin pan and adjust cooking times. But for our everyday almond poppy seed muffins, bake at 350 for 20 minutes or until lightly golden brown. You'll really want to watch these and make sure you don't overbake. Moist muffins are what we are going for.

You can eat a warm muffin with a glass of milk, or wait until your muffins have reached room temperature and enjoy! These are much better than store-bought muffins and significantly cheaper.

Variations and Substitutions for Almond Poppy Seed Muffins

This almond poppy seed muffins recipe can easily be adjusted with a few additions or variations. Here are a few things that you can try.

  • Add lemon zest and a little bit of lemon extract for lemon poppy seed muffins
  • Make a sweet almond glaze with powdered sugar to drizzle on top of your almond muffins

Top Tips

Store any leftovers that don't get devoured immediately into an airtight container. Another option is to put any remaining muffins in a freezer bag and to store in the freezer until ready to eat. These thaw surprisingly fast in the mornings before school. Or, you can cut one in half, throw it in a toaster oven and slather with butter.

Ingredients
  

  • 3 Eggs
  • 1 ⅛ Cups Oil
  • 2 ½ Cups White Sugar
  • 1 ½ Cups Milk
  • 1 ½ teaspoon Vanilla Extract
  • 1 ½ teaspoon Butter Extract
  • 1 ½ teaspoon Almond Extract
  • 3 Cups Flour
  • 1 ½ teaspoon Baking Powder
  • 1 ½ teaspoon Salt
  • 2 Tbs Poppy Seeds

Instructions
 

  • Create sugar mixture base. Combine eggs, oil and sugar together into a bowl and beat until mixed.
  • Add remaining wet ingredients to mixture - milk, butter extract, vanilla and almond extract. Mix until combined.
  • Add remaining dry ingredients to the bowl. Mix just until all ingredients are combined with no lumps.
  • Bake muffins at 350 for 20 minutes, or split batter evenly into two loaf pans and bake for 1 hour at 350.

Notes

Variations:
  • Add lemon zest and lemon extract for a little tangy flavor!
  • Make a glaze using powdered sugar and extract to drizzle over the top.

  • Store in an airtight container on your counter or put into a freezer bag and store in the freezer until ready to consume.
