Simple Steps to Make Peanut Butter Fingers Recipe
1. Preheat Oven
Begin by preheating your oven to 350 degrees. Make sure you allow at least 15 minutes or so to let it heat up and sit at the right temperature.
2. Mix Ingredients Together
Gather all of your wet and dry ingredients except for the whipped peanut butter and chocolate chips, and toss in the bowl of your stand mixer. You can also use a large mixing bowl if you don't have a KitchenAid. Mix all of these ingredients together until combined.
3. Press Mixture into Sheet
Take your peanut butter mixture and press it into the bottom of the pan that has been greased or lined with parchment paper. Make sure that your mixture is distributed fairly proportionate and level.
4. Bake Mixture
When your cookie dough mixture is completely pressed into the pan, put your tray in the preheated oven and bake it for 10-15 minutes until a nice golden brown. When your bars are done baking, remove from the oven and leave the tray out to cool.
5. Make the Whipped Peanut Butter
While the peanut butter mixture is baking, you'll want to make the whipped peanut butter. Put one cup of peanut butter into your mixer to beat. Whipping the peanut butter is easiest with a KitchenAid's flat beater. Spread the extra peanut butter onto your bars then put the tray into the freezer until it's pretty cold and somewhat solid.
6. Melt Chocolate and Add
While your peanut butter topping is cooling in the freezer, make your chocolate topping. Melt chocolate chips on low-medium heat in a boiler pot or another pan. Pour your melted chocolate sauce onto the whipped peanut butter bars and spread with your frosting knife until everything is evenly covered.
Put your tray back in the freezer until the chocolate layer hardens so each layer has a separation. Serve at room temperature!
Variations for PB Fingers
- Healthier option - for a healthier version, you can try substituting regular PB for reduced-fat peanut butter or using a different sweetener
- Use milk chocolate, semisweet chocolate morsels, or even white chocolate chips for your chocolate frosting
- We use old-fashioned oats for this recipe, but you could also try quick oats
- If you don't want the whole sheet covered with a chocolate layer, you can also add enough milk to get your chocolate sauce to a drizzling consistency and drizzle it on the peanut butter instead
What to Do With Leftover Butter Fingers
This is one of our favorite recipes so when we have a family gathering, this treat disappears by the end of the night. But if you are lucky enough to have some left to snack on later, you can store leftovers in a lidded container in the fridge for at least a few days.
You can also try chopping up a few bars and use it for peanut butter granola on your oatmeal or yogurt. You'll know at the first bite that it is just too good to pass up.
Top Tips
- Presentation - Serve this dessert on a fun tray already cut or leave it in the sheet pan for less dishes
- Feeds more - This recipe can serve about 36 if you cut the bars smaller
