Ingredients for Chicken Taco Soup

To create this easy recipe, gather the following ingredients. I used canned in order to cut down on time.

  • Diced tomatoes, no added salt
  • Diced green chiles
  • Corn, no salt added
  • Kidney beans, low sodium
  • Black beans, low sodium
  • Canned chicken or rotisserie chicken, if you don't want to have to cook raw chicken breasts
  • 1 packet ranch dressing dip
  • 1 packet taco seasoning
  • Favorite toppings

Tools or Equipment Needed

For this quick version recipe, you will want an Instant Pot or a similar pressure cooker. However, you can also make this recipe in a slow cooker or a large pot on the stove top. If you go with the stove top method, the key will be to let it simmer for a longer time to marinate all the flavors together. You will also want a can opener and spatula.

Instructions for Taco Chicken Soup Recipe

Add Canned Food

Open all of your canned ingredients. Pour all of the cans inside the Instant Pot without draining the liquid. Then, drain the chicken juice from your canned chicken and pour it into the pot as well. You can also use the equivalent amount of a rotisserie chicken.

Add Seasonings

Open the Ranch dressing packet and the taco seasoning packet, or use the equivalent of container spices or your own homemade taco seasoning. Pour them into the pot as well.

Mix Together

Give everything a good mix with a spatula and set the Instant Pot on soup for 20 minutes. Or, cook on low in a crock pot for 4-6 hours.

Serve

When your soup is done and cooked, dish it up in a soup bowl. There is nothing like a big bowl of comforting soup to fill you up. Some of my favorite things to top it with are:

  • Tortilla chips
  • Cheddar cheese
  • Sour cream
  • Fresh cilantro
  • Avocado

Variations to Try

For those looking to switch things up and add some variety to their chicken taco soup, there are several flavorful variations to experiment with.

Want a little spice? Try adding in options like diced jalapeño, green chilies, a dash of cayenne pepper or extra chili powder.

You can also experiment with different types of beans such as pinto beans or kidney beans, or even throw in some quinoa for added protein and texture.

Want to make it extra creamy? Stir in a little sour cream, cream cheese or a splash of heavy cream. The possibilities are endless when it comes to customizing this easy and delicious soup to suit your taste preferences.

Don't love chicken? You can easily substitute ground beef in its place.

  • If we have extra people eating, I always add in an additional can of black beans or kidney beans.
  • There are so many different ways to make this meal, so don't be afraid to try swapping ingredients or to add something that you really like to the mix. It is easy to interchange!
  • This meal is super easy to freeze and reheat for extra meals when you are busy and need a quick weeknight dinner. Or, store it in a food safe container in the fridge and eat the next day.

  • Pressure Cooker
  • spatula
  • can opener

Ingredients
  

  • 43.5 oz Diced tomatoes 3 - 14.5 oz cans, no added salt
  • 4 oz Diced green chiles
  • 15 oz Corn no salt added
  • 15 oz Kidney beans low sodium
  • 15 oz Black beans low sodium
  • 25 oz Canned chicken 2 - 12.5 oz cans
  • 1 packet Ranch dressing dip
  • 1 packet Taco seasoning

Instructions
 

  • Add all the cans into the Instant Pot. Drain the chicken, but use the juice from all the other cans. Add in seasoning packets. Mix together and cook in instant pot on the soup setting for 20 minutes or in a crockpot for 4 to 6 hours.
    Serve with desired toppings: tortilla chips, avocado, shredded cheese, fresh cilantro or sour cream.

Notes

Variations:
  • Add in diced chilies or pepper for spice
  • To make it creamy, add cream cheese, sour cream or heavy cream
  • Use ground beef if you don't love chicken.
