Don’t be too freaked out by the title! Actually, I was slightly grossed out about lima bean goulash too! A few years ago my husband told me he was making lima bean goulash. I turned my nose up and said “that sounds as bad as tuna casserole, no thank you.” He convinced me to give it a try and I am so glad I did because not only is it good, it is good for you and my kids love it too!
Ingredients for Lima Bean Goulash:
- 1 LB of ground beef
- 1/2 onion
- 2 cans Lima Beans or (also called Butter Beans)
- 2 cans Tomato Soup
- Chili Powder
- Salt and Pepper
- 2 Cups frozen corn
Brown the ground beef with chopped onions and salt and pepper to taste. Once the beef is browned then add beans, tomato soup and corn. Stir together and add chili powder, salt and pepper to taste. Preheat oven to 300 degrees and bake until it bubbles.
We also like to add parmesan cheese to the top and it is delicious with corn bread too!
My other favorite part of this meal is it is low in calories. My husband and I figured there are roughly 280 calories per cup!! I even like to eat the leftovers the next day and I am not much of a leftover person!
