Easy Lima Bean Goulash For the Whole Family

Lima Bean Goulash

This recipe is one of my husbands family recipes. I am not going to lie, when I heard lima bean goulash, I turned my nose up a bit. I am happy to say I was pleasantly surprised! It is now a staple in our home.

Ingredients

Other than lima beans that ingredients of this goulash are fairly straight forward

  • Lima beans
  • ground beef
  • corn
  • onion
  • tomato soup

Lima Bean Goulash

Instructions

Start by chopping up the onion. Once chopped add onion and ground beef to pan and brown. Salt and pepper to taste.

Once the beef is browned then add beans, tomato soup and corn. Stir together and add chili powder, salt and pepper to taste. Cook on the stove until bubbling, about 25 to 30 minutes. Or you can stick it in the oven to bake for 25 minutes.

Hint: We use a pan that can then be put into the oven so we don't have to transfer the lima bean goulash.

Substitutions

If you are worried how this recipe will be received by your family you can use pasta instead of lima beans.

If you want to make it a little spicier you can add a little more chili powder.

We like to garnish ours with some parmesan cheese on top.

Equipment

Equipment can have a big impact on how a recipe turns out. Stone bakeware takes longer to heat up than metal pans, and also retain heat for longer, which could make the recipe more watery, or burnt on the outsides.

My other favorite part of this meal is it is low in calories. My husband and I figured there are roughly 280 calories per cup!!  I even like to eat the leftovers the next day and I am not much of a leftover person!

Lima Bean Goulash

Don't be freaked out by the title. This recipe is a family favorite around here. I would say it is like a chili, with a little twist.

Ingredients
  

  • 1 LB ground beef
  • ½ onion
  • 2 cans lima beans aka butter beans
  • 2 cans tomato soup
  • 1 teaspoon chili powder
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups corn

Instructions
 

  • Preheat oven to 300 degrees
  • Brown the ground beef with chopped onions and salt and pepper to taste. Once the beef is browned then add beans, tomato soup and corn. Stir together and add chili powder, salt and pepper to taste.
  • After everything has been stirred together. Place the pan into the oven and cook for roughly 25 minutes. Or until it begins to bubble.
