- Kitchen scale
- Butter
- Blackstone griddle or something similar
Choosing the Right Ground Beef
When it comes to creating the perfect Blackstone smash burger, the first step is choosing the right ground beef for your burger patty. The quality of the beef you use will significantly impact the flavor and juiciness of your patties.
Look for ground beef with a higher fat content, such as 80/20 like a ground chuck, or 85/15, to ensure a juicy and flavorful burger. Avoid lean ground beef, as it tends to dry out quickly during the cooking process. By selecting the right ground beef, you are setting yourself up for burger success.
Preparing and Shaping Your Burger Patties
To prepare and shape your burger patties, start by dividing your ground beef into evenly sized portions. Use a kitchen scale to help ensure that each patty is the same weight, resulting in even cooking. We measure out 4 oz for individual balls of ground beef. We use pepper and salt with our meat but nothing else. However, you can also add onion powder or garlic powder for some added flavor, but we love savouring just the meat.
Once you have portioned out your meat, gently shape each portion into a burger balls, being careful not to overwork the meat. Press down on the ball to flatten it into a patty, aiming for a thickness of about ½ inch. To prevent the edges from cracking during cooking, use your thumb to create a slight indentation in the center of each patty. This will help the patties cook evenly and maintain their shape on the griddle.
Cooking Your Homemade Smash Burgers
Now that you have perfectly shaped your burger patties, it's time to move on to smashing and cooking them on the Blackstone griddle. Mastering this technique will result in a mouthwatering burger that has crispy edges on the outside and juicy on the inside.
Start by preheating your flat top grill to high heat, ensuring it's nice and hot before placing your burger patties on the surface. Throw a few tablespoons of butter onto the cooking surface.
Once the patties are on the griddle, use a sturdy spatula or burger press to press down firmly, flattening each patty to create that iconic crispy sear. Use a piece of parchment paper in between the burger and the smasher and hold the smash for 10 seconds.
Keep a close eye on the burgers as they cook. Use a large spatula to flip them only once to ensure a perfect crust forms on each side. Remember, the key to a delicious smash burger is achieving that caramelized exterior while keeping the inside juicy and flavorful.
The sizzle of the burgers as they cook will signal that you're on the right track. Once the patties are cooked to your desired level of doneness, it's time to assemble your juicy smash burgers.
You can also add on hamburger buns to the griddle just before they are done to get a nice buttery and crispy coating on the inside buns.
Building Your Burger
If you want a slice of cheese on your Blackstone smash burger, make sure to add that just before your burgers are ready to pull off for slightly melted cheese. Here are a few favorite toppings suggestions to add to your burger:
- Buns - Brioche buns, potato bun, toasted bun
- American cheese, cheddar cheese or Pepper jack for a little spice
- Grilled or sliced onions
- Pickles
- Crispy bacon
- Tomato slices
- BBQ sauce
- Lettuce
- Burger sauce or ketchup and mustard
Don't forget to pair a delicious side with your smash burger recipe. A few of my favorites are:
