Instructions for Grandma's Potato Salad
Boil Eggs and Potatoes
First, start by boiling the potatoes and eggs. Cut the potatoes in half and then place potatoes in a large pot with boiling water. Boil them for about 25 minutes or until a fork can easily puncture them.
Boil the eggs for about 15 minutes to get hard-boiled eggs.
Peel Potatoes and Eggs
Once your eggs are cooked and cooled to room temperature, remove the shells. Likewise, peel potatoes when your potatoes have slightly cooled. However, the majority of the time we leave the peels on. It tastes just as delicious!
Chop All Veggies and Eggs
Use a cutting board and sharp knife to dice up the potatoes, eggs, cucumbers and pickles. You will want to make sure everything is a reasonable bite size.
Combine Ingredients
Add all chopped ingredients to a bowl. Then, add in all of your seasonings and sauces at once to combine. If there are other fresh herbs or seasonings you love, feel free to add those in too.
Mix Ingredients
Finally, mix it all up! Top your creamy potato salad with a little additional salt and enjoy! Eat according to your own tastes and preferences. This salad is yummy at room temperature or chilled.
Variations
There are so many variations that you can try with a good potato salad. Experiment with the mustard and mayo combination to get it just how you like it. My favorite variation is to add a bit of dill pickle juice for a little kick.
However, here are a few more options to try depending on your preferences:
- Add green onions, red onions or sweet onions
- Change up the kind of pickles you use - sweet pickles, butter pickles or even a dill pickle relish
- If you aren't a fan of mayo, you can try substituting Miracle whip, sour cream, or Greek yogurt for more protein - but it will change the taste
- Additional seasonings: celery salt, garlic powder, onion powder, paprika, fresh parsley
What to Do with Leftover Potato Salad
Store any leftover potato salad in an airtight container in the fridge. It will stay good for 2-3 days.
Top Tips
My kids love this potato salad the next day. They put it on bread and create a potato salad sandwich.
