Red Onion Salad Dressing and a Strawberry Salad

Whether you are looking for a salad that is sure to impress a crowd or just a delicious salad that your whole family will gobble up, look no further. Every time I make this salad people always comment on how good it is! And seriously, any time I can get the kiddos to eat veggies is a win.

To make this salad you will need a blender of some sort. I love my ninja blender, with all the blades it makes mixing this dressing up so easy!

After I mix up my dressing I put it in a blender bottle with a blender ball. This recipe makes more dressing than you need for a salad so I keep the extra in my fridge for later. (recipe is below)

I use string cheese mozzarella for this salad. I love the look of the string cheese cut up in the salad and it is something we usually have on hand. Also, if strawberries aren’t your jam (pun intended), feel free to substitute another fruit that is in season. But, it is particularly delicious with strawberries or raspberries.

If you want to turn it into a main course meal, one option is to add sliced, cooked chicken breasts.

  • Cutting Board

  • Salad Bowl

Ingredients
  

Red Onion Dressing

  • 1/2 Red onion
  • 1/2 Cup Red Wine Vinegar
  • 1/2 Cup Sugar
  • 2 tsp Dry mustard
  • 1 1/2 tsp Salt
  • 1 Cup Olive Oil

Salad

  • 2 Leaf Bunches Romaine Lettuce
  • 1/2 Cup Mozzarella Cheese
  • 1 Pound Bacon
  • 4 Chicken Breasts Optional
  • 10 Strawberries

Instructions
 

Red Onion Dressing

  • In your blender, combine all dressing ingredients except for the olive oil and blend. Add olive oil after blended.

Salad

  • Wash and then cut up the romaine leaf bunches. Add them to a salad bowl. Cook bacon until crispy, and then crumble over the top. Cut up strawberries and add to the top of the salad. Cut up mozzarella or grate and add on top of strawberries.
