How to Make Homemade Chocolate Zucchini Bread
Grate the Zucchini
Take your zucchini and shred it using a box grater or something similar. You'll want your shredded zucchini to be pretty fine. Then, put your zucchini into a strainer over the sink and squeeze out any excess moisture. You can use paper towels to blot any excess liquid before moving on to the next step. Set your zucchini aside.
Beat Ingredients
Use a mixer to beat your eggs until they are smooth and lemon colored. I used my KitchenAid, but a hand mixer would work just fine. Next, add in sugars and oil and beat until mixed together.
Melt Chocolate
Melt your chocolate in a separate pot or container, then allow it to cool slightly. Be careful not to cook it on high or it will burn. If you don't have access to unsweetened baking squares, you can also use semi-sweet chocolate chips or dark chocolate chunks. Unsweetened natural cocoa powder is another option. It will depend on your preferred level of sweetness.
Mix in Zucchini, Chocolate and Flavoring
Add grated zucchini and vanilla to your mixing bowl. Then add your chocolate and mix all together.
Add Dry Ingredients
Sift the remaining dry ingredients then stir into the zucchini mixture until just combined.
Bake Zucchini Bread
Pour the chocolate zucchini bread batter into two well greased loaf pans. Fill them about halfway full. Bake in the oven at 350 for about 50-60 minutes. When the baking time is complete, insert a toothpick in the middle of the loaf to make sure it is cooked all the way through. Your toothpick should come out fairly clean.
Let your loaf cool at room temperature in the pan for 10-15 minutes before moving it to a wire rack. When the entire loaf is all the way cool, slice and serve. Enjoy!

Ingredients
- 3 Eggs
- 1 Cup Sugar
- 1 Cup Brown sugar
- 1 Cup Vegetable Oil
- 1 teaspoon Vanilla
- 2 Cups Grated zucchini
- 2 Oz Unsweetened chocolate squares
- 2 Cups Flour
- 1 teaspoon Salt
- 1 teaspoon Cinnamon
- ½ teaspoon Baking powder
- 1 teaspoon Baking soda
Instructions
- Grate zucchini. Squeeze out excess liquid and set aside.
- Use a mixer to beat eggs until they are smooth and lemon colored. Add in sugars and oil and beat together until mixed.
- Melt chocolate into a separate pot and allow it to cool slightly.
- Add shredded zucchini and vanilla to mixing bowl. Then add melted chocolate and mix until everything is combined.
- Sift remaining dry ingredients and then add into zucchini mixture until just combined.
- Pour the chocolate batter into two well-greased bread loafs. Bake at 350 for 50-60 minutes. Check for doneness and enjoy when cool!
