No Bake Cheesecake

My kids love to help me bake and this easy no bake cheesecake is the perfect way to involve the whole family. Plus, it is really good!

Ingredients

Crust:

  • 4 packages of graham crackers
  • 1 stick of butter

Filling:

Mix all together in a blender or mixer until smooth.

  • cool whip, standard size container
  • ½ cup sugar
  • 1 Tbs lemon juice
  • 1 package of cream cheese at room temp.
  • fresh berries and sauce for topping, optional

How to Make a No Bake Cheesecake

First up - smash up 4 packages of graham crackers. This is great for little hands.

You can place the crackers in a bag and smash them, but somehow my kids always manage to rip the bag. Instead we put it in a bowl and give them a cup for less mess.

Melt a stick of butter and pour into crushed graham crackers.

Once mixed, press the crust into 2 pie tins. Then place in freezer to cool.

Next, mix together 1 tub of cool whip, ½ cup sugar, 1 tablespoon of lemon juice and 1 cream cheese package. Hint: to get a nice smooth cheese cake filling use Philadelphia cream cheese at room temperature.

Once it is mixed together pour into your crust.

Chill for at least an hour and it is ready to eat. We like to drizzle ours with some raspberry sauce! Yum!
