A fruit sugar cookie pizza is the perfect dessert. It is so easy to make, delicious and feeds a lot of people. Don't forget it looks pretty too!

Since I was a little girl my mom always made the best sugar cookies. View here I decided to try this recipe out for the fruit pizza. It worked so amazing, I did pair it with a cream cheese frosting to add a bit of tartness.

Instructions for Sugar Cookie Dough
Combine all of the liquid ingredients and sugar into the mixing bowl. Mix until everything well integrated.
Add all dry ingredients into a bowl. Next, but the shortening into the flour mixture.
Add the dry mixture to the liquid mixture. Add slowly so the flour doesn't go everywhere.
This is what the dough should look like once mixed.
Hint: don't over mix. I mix each step for about 2 minutes.
Press the dough into your tart dish. I left the dough about ¼" thick. Now it is ready to bake at 400 degrees for about 10 to 12 minutes. Watch it close, as soon as the edges start to brown I pull it out.
Instructions for Fruit Pizza Frosting
While the fruit pizza is cooking, combine all the ingredients into a mixing bowl and mix together.
After the fruit sugar cookie pizza comes out of the oven let it sit for about 1 minute. Then add the frosting to the hot sugar cookie
See how the cream cheese is kind of lumpy? The heat of the sugar cookie will melt the frosting and make it smooth.

A fruit sugar cookie pizza is best served the same day. However if you cover it with saran wrap it will keep for a day, maybe 2. If you need it to keep longer, don't put the frosting or fruit on until the day of.
Sugar Cookie Fruit Pizza
- ¼ cup butter
- 1 cup sugar
- 2 eggs
- 2 teaspoon vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- ¾ cup shortening
- 8 oz cream cheese softened
- ⅓ cup sugar
- 1 teaspoon vanilla
- Mix eggs, butter, vanilla and sugar together
- Combine flour, salt and baking powder. Cut shortening in to flour mixture until fine crumbles.
- Bake at 400 degrees for 10 to 12 minutes
- Mix all frosting ingredients together.
- Add frosting to the sugar cookie dough while it is still warm.
- Add fruit
