I am always looking for easy recipes, that are healthy and the whole family will eat. Fast ham fried rice is one of those. It is perfect for crazy nights as I can make it early and keep it on warm until everyone eats. It is also great the next day… and who doesn't love leftovers.

Another family favorite is this cashew chicken.

Ingredients
- Minute rice
- eggs
- ham steak
- frozen peas
- canned corn
- soy sauce

Instructions for Fast Ham Fried Rice
You will see how easy it is to make below.

First dice up the ham steak into cubes.

Scramble up your eggs in the wok first before adding anything else.

Add ham, peas and corn to the wok. Heat them all up together.

Add rice and soy sauce. Mix everything up until warm and let cook on medium for about 5 minutes. Then it is ready to serve.
Hint: Start the water for the minute rice at the beginning and then add rice once boiling.

Storage
Ham fried rice is so easy to keep warm for the evening. When we have crazy schedules for the night I will often make this early on and then keep it warm in the wok.
Not to mention it is delicious the next day. We store it in an air tight container in the fridge. Just warm it in the microwave for about 2 minutes and it is ready to be eaten.

- 6 cups rice
- 5 large eggs
- 1 ham steak
- 1 cup frozen peas
- 1 can corn
- ⅛ cup soy sauce
Instructions
- First start the water for you minute rice, once boiling add rice - follow instructions on your box.Warm up a wok, or panAdd scrambled eggs and cookCut up ham steak into small cubes and add to scrambled eggs.Also add peas and corn and cook everythingOnce cooked add in minute rice and mix all togetherAdd ⅛ cup of soy saucemix all up and ENJOY!
