You know how hard it is when you are trying to eat healthy, but you have the world’s pickiest eaters at your table? (Welcome to parenthood, ha.) Well, I love to find a good recipe and tailor it to my family so they will ALL eat it. I often try to watch what I am eating and with this low carb cashew chicken recipe I can do just that – but my family loves it too!

Low Carb Cashew Chicken Dinner for the Family

So, one of the main things I do to help keep my carbs/calories down is substitute rice with cauliflower rice. I picked up this big bag at Costco in the freezer section. So I sauté some cauliflower rice for myself and then make rice for the rest of the family.

Also, this recipe is really good as leftovers too, so I often double it for lunch the next day. (I don’t usually eat leftovers, but I will eat this one – so you know it’s that good!)

Low Carb Cashew Chicken

-Family size recipe

  • 10 chicken tenderloins
  • 2 Tbs olive oil
  • 1/2 cup cashews
  • 1/2 medium green bell pepper
  • 1/2 tsp ground ginger
  • 1 Tbs rice wine vinegar
  • 1/2 Tbs chili garlic sauce – this will make the chicken spicy… so add more or less depending on how spicy your family likes their food
  • 1 Tbs minced garlic
  • 1 Tbs sesame oil
  • 1/4 medium yellow onion
  • salt and pepper to taste

Prep Work

How to Make Low Carb Cashew Chicken

First, brown your cashews in a frying pan – about 8 minutes. You don’t need any oil, just stir occasionally. The cashews will be done when you can start to smell them.

While the cashews are cooking I cut my chicken into cubes, then cut up my pepper and onion.

How to Make Low Carb Cashew Chicken

Once the cashews are cooked remove them from the pan so they stay crunchy. Add your chicken, onion and bell pepper into the pan with the olive oil and cook until the chicken is cooked through. Once the chicken is cooked I add the remaining ingredients:

  • 1/2 cup cashews
  • 1/2 tsp ground ginger
  • 1 Tbs rice wine vinegar
  • 1/2 Tbs chili garlic sauce – remember, this is your spiciness factor so use sparingly, if needed.
  • 1 Tbs minced garlic
  • 1 Tbs sesame oil
  • salt and pepper to taste
